So it turns out my oven's bottom rack was much too low, and thus one of the first two trays of ginger cookies got a little overdone on the bottoms. But! I have eaten the burnt-est of those cookies, and it wasn't bad, and certainly not ruined, so I've packed that tray up separately so people who are turned off by any burn at all can avoid them, but I will not throw them away.
The whole thing is a little less spicy than I've made them before. Which is a pity, because I was generous with the ginger and cinnamon. Maybe the spices have denatured over time. (Or maybe I'm remembering the spiciness of previous cookies inaccurately.) (Or maybe both.)
But now I have beer!
